Dal Dhokali Recipe

Dal Dhokli Gujarati Recipe…



Ingredients
  1. 250gm Pigeon Pea
  2. 200gm Wheat Flour
  3. 2 Spoon Turmeric Powder
  4. 2 Spoon Red Chili Powder
  5. 1 Spoon Carom Seed
  6. 3-4 Cloves
  7. 2-3 Cinnamon
  8. 1 Spoon Black  Mustard Seeds
  9. 10-15 Curry Leaves
  10. 2 Green Chilies (Cut in pieces)
  11. Pinch of Asafetida
  12. ½ Spoon Tamarind Paste
  13. 25gm Cashew nut
  14. 50gm Groundnut
  15. ½ Spoon Garam Masala
  16. 1 Spoon Tomatoes Paste
  17. 3 Spoon Oil
  18. 1 Spoon Ghee
  19. Salt as per Taste


Method
  1. Take Wheat Flour and knead with Water.
  2. Add 1 spoon each of Turmeric Powder, Red Chili Powder and Carom Seed. Also add Salt as per taste.
  3. Mix all of them well.
  4. Now knead again with 1 Spoon Oil
  5. Make Roti and cut into desired pieces to make Dhokli.
  6. Wash Pigeon Pea (Tuvar Dal) with clean water and cook in pressure cooker for 10 minutes.
  7. Cool it down for 15 minutes.
  8. Get Pigeon Pea (Tuvar Dal) out of pressure cooker.
  9. Heat 2 spoons Oil and 1 spoon Ghee in a metal bowl.
  10. Pour Cloves, Cinnamon and then add Black Mustard Seeds in heated Oil/Ghee.
  11. Add Curry Leaves, Green Chilies Pieces and a Pinch of Asafetida.
  12. Pour cooked Pigeon Pea (Tuvar Dal) into it.
  13. Add Tamarind Paste, Cashew Nuts, Groundnuts, Garam Masala, and 1 spoon Red Chili Powder, and Mix them.
  14. Add Tomato Paste, 1 spoon Turmeric Powder, Salt and 2 cups of Water.
  15. Let them boil properly.
  16. Pour pieces of Dhokli one by one in to boiling Dal.
  17. Boil for 10 minutes.
  18.  
Serve HOT and add Ghee on it to make it TESTIER.......

Ingredients

Ingredients for Dalvada batter
500gm Lentils (Mung Been)
50gm Black Lentils (Adad)
50gm Rice
Ginger Paste or Shredded
Dozen Chopped Green Chilies
10 Chopped Garlic Buds
Pinch of Asafetida (Hing)
1 Tea Spoon Black Pepper (Powder)
Salt as per Taste

Oil to Fry

Serving Ingredients
Sliced or chopped Onion
Chilies


Method
Dalwada is healthy and delicious food, eating in rainy season would be very much joyful experience.

Prepare Batter for Dalwada
  • Mix Mung Lentils, Black Lentils and Rice in a bowl.
  • Pour water in bowl so all mixture covered with water.
  • Keep this Dalwada (Dalvada) mixture aside for about 6 hours.
  • Now p
  • artially crush this mix in a mixture so it becomes thick paste.
  • Add Ginger paste, chopped Chilies, chopped Garlic buds, pinch of Asafetida, Black Pepper powder and Salt into it.
  • Stir this mixture well, so all spices get mixed evenly with dalvada mixture.

Frying Dalvada
  • Pour Oil in a frying pan and boil over gas stove.
  • Now put small dough of Dalwada mixture in frying pan and fry it.
  • Take fried Dalwada out and pour more until you finished with mixture.

  • Now cut the chilies parts and fry them in heated oil. Take them out of pan sprinkle salt on it.
  • Serve them with sliced Oinon and fried chillies.
 A testy and healthy Dalwada is ready to eat. I can’t wait for rain.

Ingredients
  1. 200gm Semolina / Rice Flour Fine
  2. 50gm Gram Flour
  3. 2 Cup Butter Milk
  4. Salt as per Taste
  5. 1 Spoon Green Chilies Paste
  6. 1 Spoon Ginger Paste
  7. 1/2 Spoon Turmeric Powder
  8. 3 Spoon Oil
  9. 1 Spoon Soda Bi-Carb or ENO
  10. Squeeze Juice of 1 Lemon
  11. 1 Spoon Black Mustard Seeds
  12. 10-12 Coriander Leaves
  13. 1 Spoon Red Chili Powder


Method
  1. Mix Semolina, Gram Flour and Butter Milk in a bowl and stir it well.
  2. Make as smooth as possible.
  3. Mixture should be consistent and thick.
  4. Add Salt and keep in dry place for about 4 hours.
  5. Add Ginger - Green Chili Paste, Turmeric Powder into mixture and mix well.
  6. Prepare pressure cooker on gas stove.
  7. Grease the backing plate with some Oil.
  8. Take a small bowl and add 1 spoon Soda Bi-Card or ENO, Lemon Juice and 1 spoon Oil and mix them well.
  9. Add this in to prepared mixture.
  10. Pour final mixture over greased plate and cook for 10-12 minutes in cooker.
  11. Cool for about 10 minutes and cut into cubes.
  12. For seasoning heat 2 spoons Oil in small fry pan.
  13. Add Black Mustard Seeds.
  14. Spread seasoning over Dhokla.
  15. Garnish the Dhokla with Coriander and Red Chili Powder.

Serve with Chutney/Souse/Pickle.

Ingredients
  1. 1 Liter Milk
  2. 450gm Sugar
  3. 1 Spoon Cardamom Powder
  4. 4-5 Saffron
  5. 1 Spoon Almonds Chopped


Method
  1. Take a broad and Deep Pan.
  2. Pour Milk into it and put on Gas stove at medium heat.
  3. Add Sugar, Chopped Almonds and Saffron into it.
  4. Boil milk for about 25 minutes, stir continuously.
  5. Now Milk becomes quite thick and almost half in quantity.
  6. Turn off Gas stove.
  7. Cool for a while.

Cool down it in Refrigerator if you want chilled.


Dudh (Doodh) Ni Kheer

Ingredients
  1. 1 Liter Milk
  2. Basamati Rice - Half Cup
  3. 100gms Sugar
  4. Cashew Nuts, Almonds, Pistachios Scrap
  5. 4 to 5 Pieces of Cardamom
  6. Half Tea Spoon Saffron


Method
1.     Boil milk and sugar in a steel bowl at slow tape.
2.     Now aside wash rice.
3.     Now pour rice in boiling milk.
4.     Pour saffron in boiling milk.
5.     After 10 to 15 minutes pour Cashew Nuts, Almonds, Pistachios Scrap in milk
6.     Aside grind cardamom and pour them in milk too.
7.     Let it boil for 5 to 7 minutes.
8.     Delicious Dudh (Doodh) Ni Khir is now ready to eat.



9.     If you want chilled then let it cool down a bit and then chill it in fridge.

  1. 50gm Gram Flour
  2. Pinch of Turmeric Powder
  3. 1/2  Spoon Cinnamon Powder
  4. Salt as per Taste
  5. 2 Cups Butter Milk
  6. 2  Spoon Oil
  7. Pinch of Asafetida
  8. 1 Spoon Black Mustard Seeds
  9. 1 Spoon Cumin Seeds
  10. 1/2 Inch Ginger Paste
  11. 2 Green Chilies
  12. 10-12 Curry Leaves
10-12 Coriander Leaves


Method
  1. Take a bowl and add Gram Flour, Turmeric Powder, Salt and Butter Milk.
  2. Stir the contents and mix them well.
  3. Now heat Oil in fry pan over gas stove.
  4. Add Pinch of Asafetida, Black Mustard Seeds and Cumin Seeds into it.
  5. After crackling ingredients pour mixture of Gram Flour and Butter Milk.
  6. Let them heat for a while. (2 minutes)
  7. Add Ginger Paste, Green Chilies and Curry Leaves.
  8. Heat it on low flame for about 7-8 minutes.
  9. Garnish with Coriander Leaves.


Spicy Curry is ready to eat.

Gujarati Jalebi Recipe

Jalebi Recipe (Funnel Cake Recipe)


Ingredients

Ingredients for Jalebi Batter
500gms All Purpose Flour (Maido)
100gms Gram Flour
Yeasts or Curd
400ml Water

Ingredients for Sugar Syrup (Chasni)
1KG Sugar
Water, about 1 Liter
Few buds of Saffron

500gms Ghee for frying Jalebi


Method

We are using traditional way to make Jalebis. Which take 2 days to prepare batter of Jalebi. It is quite easy recipe and not as difficult as it seems.

Preparation of Jalebi Batter
  • Take a bowl and Mix All Purpose Flour and Gram Flour; add one tea spoon of yeast or table spoon of curd into it.
  • Add some water (about 400ml) and stir it to mix well.
  • Keep this jalebi mixture aside for 48 hours. Do not put it in freeze.
Preparation of Chasani
  • On the day of making Jalebi you have to first make Sugar Syrup or Chasani.
  • Boil 1 Liter water and add Sugar into it.
  • Add some more water if sugar doesn’t sink into water.
  • Continuously stir it and make little thick syrup (Chasani).
  • Chasni should have thread consistency. Mean a drop of chasni put on finger and gently press with another finger; it should form a string while you slowly release fingers.

  • Add Saffron buds into chasni, which gives a flavor to jalebi.

Frying Jalebi
  • It’s time to start frying Jalebi in ghee.
  • Heat up Ghee in flat frying pan on stove.
  • Now take some empty tin can or empty plastic bottle and make a small hole on downside. You can also use small polyethylene bag with small hole on corner.
  • You can use any such tool or make such thing from waste.

  • Take jalebi mixture in it and pour in jalebi shaped round in heated ghee in frying pan. You can add your best imagination to male own shape of jalebis.
  • Fry it both side and make little golden in color.
  • Take out of frying pan and put in sugar syrup.
  • Let Jalebi soak some chasni. Take jalebi out of it and put in serving vessel.

Jalebi Trivia
Though Jalebi made on many occasions but in Gujarat it’s widely eaten on Dashera along with Fafda. On that day people rushes for Fafda and Jalebi (Jilebi in Rajasthan).

Ingredients
  1. 500gm Wheat Flour
  2. 1 Spoon Ghee
  3. Salt as per Taste
  4. 1 Spoon Cumin Seeds
  5. ½ Spoon Black Pepper Powder
Method
  1. Take Wheat Flour and knead with Water.
  2. Add some Salt in to it.
  3. Now knead flour and make smooth.
  4. Make small and equal ball of dough to make Roti.
  5. Roll out Roti of each ball; make them as thin as possible.
  6. Roast Roti from side evenly.
  7. Press with some cloth from TOP while roasting from each side.
  8. Roast until Roti becomes crispy and brown in color.
  9. Roast each Roti one by one with same system.

Plain Khakhra are ready, eat them or store in air tight container.

To make Masala Khakhra when you are kneading dough add Cumin Seed and Black Pepper Powder, and repeat other steps.
