Undhiyu Gujarati Recipe …

For Muthiya…
  1. 200gm Gram Flour
  2. 100gm Fenugreek Leaf
  3. Half Piece Ginger Paste
  4. 2 Green Chili Paste
  5. Oil to Deep Fry
  6. Salt as per Taste
For Undhiyu…
  1. 2 Spoon Ginger-Chili Paste
  2. 100gm Coconut Scraped
  3. 50gm Sesame Seeds (Crushed)
  4. 200gm Green Pigeon Pea (Crushed)
  5. 50gm Green Garlic Paste
  6. 50gm Coriander Leaves
  7. 2 Spoon Cumin Seed Powder
  8. Salt as per Taste
  9. 2 Spoon Sugar
  10. 1 Spoon Garam Masala
  11. 250gm Purple Yam
  12. 200gm Sweet Potato
  13. 200gm Baby Brinjals
  14. 250gm Potato
  15. 250gm French Beans
  16. 4 Spoon Oil
  17. 1 Spoon Black Mustard Seeds
  18. 1 Spoon Carom Seed

  1. Mix Gram Flour, Fenugreek Leaf, Ginger-Green Chili Paste and Salt.
  2. Add some water and knead it.
  3. Make handful pieces (Muthiya) of kneaded dough.
  4. Take some Oil in fry pan and fry all Muhtiya one by one.
  5. Keep them aside.

  1. Clean all vegetables with water.
  2. Create a mixture of Ginger-Chili Paste, Coconut Scrap, Crushed Sesame Seeds, Crushed Green Pigeon Pea, Green Garlic Paste, Coriander Leaves, Cumin Seed Powder, Salt, Sugar and Garam Masala in a bowl.
  3. Cross cut Purple Yam, Sweet Potato, Baby Brinjals, Potato from one up to more than half, and feel with created mixture.
  4. Cut down French Beans in pieces.
  5. Take one big vessel with thick bottom and add 4 spoon Oil and put on to gas stove.
  6. When oil heated add Black Mustard Seed and Carom Seed.
  7. After crackling pour French Beans Pieces in to it.
  8. Add Salt in it and let heat that for 5-7 minutes.
  9. Add Purple Yam, Sweet Potato, Baby Brinjals, Potato feel with mixture in to it.
  10. Cover the vessel with big plate.
  11. Stir time to time so it doesn’t stick into vessel.
  12. After all vegetables cooked inside vessels add Muthiyas into it.
  13. Stir one more time and cover vessel once again, than turn off gas stove.
  14. Keep it for 15-20 minutes.

Decorate with Coconut Scrap, Coriander Leaves and Serve HOT.
